If you follow me on Instagram, you will know that there has been a lot going on that hasn’t made it to these blog pages. Namely, my dear Aunt Tina died of breast cancer. She was only 47. Tina moved to my hometown when I was little and she ended up being more like a big sister than an aunt. She was always around and most definitely around when I needed someone other than my mom to talk to. I so desperately want the chance to get some last bits of advice from her, but by the time I got to Seattle from London, her mind had already slipped from what it once was. Meal Plan #23

Sorry for all of the technical difficulties lately! My lovely tech guy is helping me switch my hosting, and it is turning out to be a bit of a pain. We’ve temporarily gone back to our old host while we work out some bugs, so hopefully this is all coming through alright!

This week I’ve gotten a bit nostalgic with my meal planning. I found myself in the mood for a meal from my childhood (sloppy joes) as well as a meal from Jason’s teenage years at his family’s favourite local Chinese restaurant called “honey walnut shrimp”. Both aren’t the healthiest of meals, but I have some ideas up my sleeves to make them both healthy and delicious! Fingers crossed they turn out so I can share them with you!

Happy Monday! Charlotte had two very specific requests for dinners this week: pea carbonara and quinoa patties. I have also included a recipe I saw for “sweet Korean lentils” that sounds delicious! Hopefully it turns out so I can share it with you all!

Meal Plan #17

Holy Week can be a bit crazy for church musicians. Thursday is a particularly busy day, so I will be preparing a casserole for the babysitter to pop in the oven. Hopefully there will be enough for both Jason and me to have leftovers when we get home! I’ll also finally be getting to that pea carbonara this week that I’ve been intending to re-try for ages. Fingers crossed I can get it to turn out better this time than last time (when it was FAR too creamy!).

Meal Plan #14

I went to make the pea carbonara from last week’s meal plan and realised I had no eggs! (I’m always running out of eggs…) Anyway, there is no pea carbonara recipe again this week, but I did manage to come up with a really fun recipe that night instead. I want to try a few different variations before posting it, but as a little teaser I’ll tell you that it is a super easy wonderpot version of a family favourite. 😀

We’ve got another cold week ahead here in London, so I’ve put two soups, and one of my favourite childhood comfort foods (chicken parmigiana) to keep us nice and cosy. I’ve also got a really fun Friends With Recipes post for you this week! I can’t wait to share it with you!
