I usually stick to healthier dinners than this, but when I saw this recipe on Cup of Jo last week, I knew I had to give it a go! My version ended up being quite different from the original recipe due to the bacon and a few shortcuts, but I can’t imagine that the original was any tastier because this was out-of-this-world delicious!! Definitely a decadent treat, but it still had spinach in it, so I refuse to feel guilty about it! 😉
While this doesn’t qualify as a one-pot meal, it is technically a one-pan meal! When all was said and done, I had only dirtied a cutting board, knife, two spatulas, and one pan. Oh, and a wine glass . . .
(I was about to apologise for my not perfect kitchen above when I remembered this isn’t Instagram! Ha!)
ingredients for two sandwiches:
-4 pieces of bread
-room temperature butter
-a swig of olive oil (1 tablespoon)
-cheddar and gruyere cheese (or whatever you have in the fridge)
-4 slices of bacon (what Brits refer to as smoked, “streaky” bacon)
-a drizzle of balsamic glaze
-one small/medium bag of spinach (it shrinks LOADS when cooked!)
-Drizzle a bit of olive oil into your pan and let it warm over a medium heat before adding the bacon.
-Remove the bacon once it is cooked to your liking, and set aside. Leave the bacon grease/olive oil in the pan.
-Reduce heat to medium/low and add your onions to the oil/grease. Let them cook until they are nicely browned as seen above. Remove the onions when they are finished, and set aside.
-Empty an entire bag of baby spinach into the grease/oil, and let it cook down. Once they are completely soft, set them aside.
-Butter one side of each piece of bread, and assemble your sandwich: cheese, onions, spinach, a drizzle of balsamic glaze, and top with bacon. (If you were feeling truly decadent, you could add a fried egg to the top!)
This was one of those meals where I couldn’t stop saying out loud how incredibly delicious it was. Pete was a bigger fan the Charlotte (who apparently doesn’t like bacon?!?!) but they both ate it in the end. I will definitely make this one again!
