Cheesy Broccoli Jacket Potato

I had never heard the term “jacket potato” until we moved to the UK. In America we would just call it a baked potato, but give it a cutesy name and it all of a sudden becomes a thing! You can find “jacket potatoes” on most cafe menus and they seem to be fairly common at dinner time as well. While I have indulged in a jacket potato at a cafe in the past, I have never tried them at home until this week (using this recipe as inspiration). The result? We’ll definitely be having them again soon!

The cheese sauce is creamy and mild and even though Pete had a massive tantrum refusing to eat his, once he tried it, he gobbled down that cheesy broccoli like it was going out of style. I’ll consider that a win overall.

Cheesy Broccoli Jacket Potato

Ingredients

  • Potatoes:
  • 5 medium baking potatoes
  • 1 Tbsp olive oil
  • salt
  • Broccoli Cheese Sauce:
  • 1 head of broccoli, chopped
  • 1 clove garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 250ml (1 cup) mlk
  • 150g (1.5 cups) of grated cheddar cheese
  • pinch of nutmeg
  • pinch of celery salt (if you have it)
  • garnish: salad onions (green onions), crumbled bacon, sour cream

Instructions

Potatoes:

heat oven to 200Β° C (400Β° F)

wash and dry potatoes before pricking with a fork

coat in olive oil

sprinkle with salt

bake on baking sheet for 45-60 minutes or until soft throughout

Broccoli Cheese Sauce:

steam broccoli

melt butter in a medium sized pan

add minced garlic to butter and let cook for a minute or so

whisk in the flour and let cook for another minute or so (constantly whisking)

whisk the milk in and bring to a simmer (still constantly whisking!)

stir in cheese and let melt before stirring in broccoli

open potatoes and pour sauce over top
