Meal Plan #43

Last weekย I realised quite late on Thursday night that I didn’t have what I needed to make dinner. I had ordered a butternut squash on my online shop for this recipe, and it ended up being no where near the size I needed to feed the five of us. I had nothing in the freezer that would be easy, and didn’t even have any tinned soup in the cupboard. I ended up ordering some (delicious) Indian food, but I felt totally defeated by it all.

The panic of realising it was dinner time and I had no dinner reminded of another reason why I meal plan: it makes me feel in charge, prepared, and ultimately, more calm. As someone who has always struggled with anxiety, anything I can do during my week to feel organised and prepared will never go unappreciated. The thought of facing another weeknight with blank eyes is too much for me, so PLEASE share your cupboard meals with me in the comments below! What do you make when you have nothing else planned and no real groceries in the house?

Monday:
Vegetable Thai Yellow Curry
(this time with enough butternut squash!)

Tuesday:
Miso Soup with Veg and Noodles

Wednesday:ย 
Farro and Lentils (with added veg)

Thursday:
Teriyaki Salmon Burgers

Friday:
Pizza

    I batch freeze tomato sauce for pasta, have this & grate iwhatever cheese we have: feta, Parmesan or pesto pasta & albacore tuna.
    Also, you can’t beat the humble baked potato, with cheese, baked beans, salad, grated beetroot, albacore tuna; anything that’s lurking in the fridge/cupboard. It’s still one of my favourite meals!

    Puttanesca. Anchovies, capers, chopped tomatoes, olives, garlic, dried chilli flakes and some decent tuna if you have it. Warm through and toss through pasta. Delicious and apart from garlic all cupboard ingredients. If you have it fresh parsley chopped on top is good.

    A chickpea curry with rice is a go-to in our home. It might be a bit more bland than if I’d planned in advance as sometimes have to resort to things like prepared garlic and ginger in jars, but it usually does the trick. Or, like you did, just order out! ๐Ÿ™‚

    Bean Chilli is my go to cupboard meal! The only fresh ingredient needed is a red onion. Sweat red onion with chilli powder, turmeric, ground ginger, paprika and a bit of cinnamon. Add a tin of mixed beans, tin of kidney beans in chilli sauce, some stock and tom puree and cook for about 40mins. Delicious just with rice or if you have it then some avocado or broccoli and feta cheese. Yum and easy!
