Meal Plan #69

After two very busy weeks without childcare, our new au pair arrives tomorrow! Woo hoo! She is oh so lovely, but also oh so vegetarian. We tend to eat mostly vegetarian meals, but I’ve gotten in the habit of throwing in a meaty meal once a week and we also have a fish dish at least once per week (I guess that’s not a very vegetarian diet now that I think about it . . . ).

Dinnertime is a very important time of the day in the Hungerford household, and I really hate the thought of our au pair eating a separate meal from everyone else. Also, realistically, I don’t have the time/energy to cook two separate meals during the week. It seems like the best option will be to come up with more vegetarian meal plans, or to have meals where the meat/fish is easily omitted from one portion. (The last option would be tricky for me as I generally like to cook everything in one pot/dish when possible! Also, what would her protein be then. . . ) Anyway, you guys always have great advice and recipe ideas, so please link away in the comments below!!

Monday:
White Fish with Herb Sauce and Artichokes

Tuesday:
Chicken and Dumpling Soup
(SO yummy!!)

Wednesday:
Aubergine Parm
(I use Jamie’s recipe)

Thursday:
New Hungerpot!
(I didn’t get to this the other week, so I’ll try again this week!)

Friday:
Pizza

    I made this last night.
    One pot, can omit or add vegetarian/ meat sausages or indeed cook them separately.
    2x tins green lentils
    1x tin chopped tomatoes
    1x onion
    1x celery stick
    1 x carrot
    1x vegetable stock cube
    Garlic
    S&P to taste
    Some water, I just added it from the kettle until it looked covered, maybe 500ml at a guess!
    Pop it all in one casserole dish & stick in in the oven for an hour, Sausages less.

    Can add more celery, carrots, & onion.
    It’s delicious, even my MEATY husband devoured it!

      Hi Emma, I made this recipe tonight and cooked up the sausages separately as I didn’t fancy them for myself but knew my kids and husband would appreciate them. It was so delicious and super easy!! There were empty plates and I’ll be making it again. Thank you xx love Hannah xx
