Our internet is out so I’m sitting in a cafe to get my work done today. I was pretty irritated this morning thinking I would have to get dressed and leave the house when I was feeling so cosy at home, but I’ve found a quiet little spot with a yummy almond latte and I really can’t complain!
I was looking through some of my old recipes to find inspiration for this week and was happy to be reminded of my quinoa patties. We used to eat these every week because they are SO yummy and super easy to make. I also love a recipe with minimal cleanup, so that’s definitely a bonus with these! The rest of this week’s meal plan is focused on vegetarian meals to accommodate our new veggie au pair. I was briefly worried about cutting down too much on my kids’ meat intake (worrying about protein, iron, etc.) but a friend recently reminded me that they both eat meaty meals at school, so I don’t need to worry! (And I love a burger, so I’m not worried about me either. :D)
