Meat Ball Sandwiches

Every year my best friend’s mom, Barb (of Barb’s Famous Sausage Bread), would throw an Eve of Christmas Eve party. To keep things simple she would make a massive batch of meatballs and a big salad, set out some rolls, and everyone queued up and filled their own plates. I looked forward to Barb’s meatball sandwiches all year, and when the big night arrived, I ate as many as I could possibly stomach.

It is no surprise that, as we head towards Christmas, I started thinking about making my own version of meatball sandwiches. Nothing ever compares to Barb’s cooking, but I have to say that these meatballs were flipping delicious. Since Pete has started to get fussy about eating his veggies (ugh), I added a bunch of kale to these and he was none the wiser (honestly, if I hadn’t put it in there myself I wouldn’t have known it was in their either!).

Meatball Sandwiches

Ingredients

  • meatballs:
  • 250g (half a pound) beef mince
  • 250g (half a pound) pork mince
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon Worcester sauce
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon celery salt (optional)
  • half a small onion, grated or finely chopped
  • 1/4 teaspoon salt
  • 1/2 cup of finely chopped kale
  • a drizzle of olive oil for frying
  • bread rolls*
  • pasta sauce**
  • grated mozzarella cheese

Instructions

Mix together all ingredients for the meatballs (best done with your hands!).

Form the mixture into small balls.

Heat oil over a medium/low heat and add meatballs.

Brown meatballs on all sides. They are finished once they are cooked through (I always cut one open to check).
