Easy Salmon Burgers

This easy salmon burger recipe makes for a super easy weeknight meal. I’ve made these in a food processor, but you can also just chop all the ingredients finely if you don’t have one. You can also substitute out the dill and smoked paprika for whatever you have on hand that sounds good. (The chia seeds caught my eye in the pantry so I threw them in there, but they’re not necessary). Basically, as long as you have the salmon, breadcrumbs, and an egg, you can add (within reason!) whatever else you fancy! Have fun, and let me know what you try!

Friends with Recipes: Cheat’s Omelette

Cheat’s Omelette by: Arnold Bennett (presented by Rachel Kenny-Green)

I think that eggs and smoked fish cooked together is the ultimate comfort food combination. It’s my emergency recipe for those moments when all hell has broken loose and you realise you’ve left tea time a bit late and the children are either going to fall asleep or start hitting each other. It’s ridiculously quick to cook but feels like a tea time treat.

Niçoise Salad

This is such a fun, easy meal that is perfect to make ahead for a busy evening. This is particularly meant for those of you who don’t fancy themselves cooks (coughEmmacough). All it really requires is a bit of boiling, and mixing up an easy dressing (or just use one that is readymade). It is great way to introduce salad to kids as it has plenty more than just leaves (which can be difficult for kids to chew).

(PS: For those of you waiting on the salmon burger recipe, I am going to try it again next week to perfect the technique! It is coming soon, I promise!)

The kids absolutely loved it, and I have to admit I was quite pleased to have figured out a quick and easy version of this old favourite. I will hopefully get the recipe up for tomorrow morning!

Hawaiian Salmon Burgers

I’ve made some big changes to my inspiration recipe for these salmon burgers. The changes I made simplified things quite a lot, but also added strength to the salmon mixture so they would be easier to cook up. The end result was absolutely delicious! We will definitely have these again soon!

PS: I mistakenly got half the amount of salmon I needed and so only made a half batch of these as seen in the pictures below. A half batch fed my family of four, but Jason and I would have definitely each had another one of these if there had been more! I’ve written up the full recipe below. It generously feeds a family of four with perhaps a few leftovers.

Meal Plan #15

I am super pumped about the salmon burgers this week! I will be simplifying the recipe quite a bit, but if you have the time, the original recipe looks worth the effort (though I’ve not tried it yet . . . ).

I’d also like to share our homemade pizza dough recipe and technique with you later this week. We’ve finally figured out how to make them turn out from scratch at home without getting soggy in the middle. Jason said the one he made was perhaps the best pizza he has ever eaten!! From a foodie/pizza fan, that is saying a lot!

Lenten Creamed Tuna Over Toast

(Apologies for the silence over the last week. Half term with limited childcare, a husband out of town, and house guests didn’t leave me much time to blog! So don’t mind me as I try to catch up a bit this weekend!)

Creamed tuna over toast is a meal that my mom would often make on Fridays during lent. It is meant to be a very simple, meat-free meal, but it is actually surprisingly tasty! Not tasty like a lasagne, but certainly tastier than it looks! It also takes all of ten minutes to make with items from your pantry, which is nice.

Welcome to our first edition of Friends with Recipes! My friend Sarah owns an absolutely gorgeous online children’s shop called Archie’s Boutique. In addition to being super stylish and uber cool, she is also a super sweet mama to two beautiful boys. Teatime at her house is always delicious, so I thought she would be perfect to start off our series! (That, and she was the one who made me start this blog in the first place, so it was easy to convince her to join in the fun.)

Teriyaki Salmon with Spinach and Avocado

Salmon is delicious on its own, but this recipe takes it from delicious to absolutely decadent! The original recipe is worth trying if you have the time, but this version is WAY easier and still amazing. Both kids loved it; Charlotte even had seconds!

Instead, I read loads of reviews on Ocado (my grocery delivery service) before deciding on this one. It was so good! I’ll definitely buy it again!
