Italian Hungerpot

If you’re a wonderpot (or “hungerpot” as I like to call them!) novice, there isn’t much to know. You just throw everything in a pot and cook it all together at the same time and that’s that! As far as I can tell, this recipe was adapted by Apron Strings from what was the original “wonderpot” which was first published by Martha Stewart. I’ve adapted it further to include some veg.

This dish is delicious as is, but it would also be really yummy with some ground sausage, or sliced kielbasa. You could easily add in some uncooked shrimp to the pot if you wanted to keep things super simple!

  • -3/4 package of dried linguine noodles
  • 400g can (15 ounces) chopped tomatoes with liquid
  • 1 medium sweet onion, chopped
  • 4 cloves garlic, very thinly sliced
  • 2 tablespoons dried oregano leaves
  • 1 litre (4.5 cups) water
  • 2 chicken/veg bullion cubes
  • 2 tablespoons extra virgin olive oil
  • 1 bunch (about 10 to 12 leaves) basil, diced
  • 4 handfuls of spinach (200 g?)
  • garnish: parmasean cheese and/or basil

starting with the olive oil, add all ingredients except the spinach and basil to your pot

bring to a boil before covering and reducing to a simmer

stir every few minutes until the pasta is ready

once cooked through, stir in basil and four big handfuls of spinach

garnish with parmesan cheese and/or basil

This was half the amount of spinach, by the way! It reduces to nothing!
