After three weeks of school holidays, we are finally back to a normal schedule! (Well, we would have been if Pete hadn’t woken up vomiting this morning.) We just got back yesterday from a week in Spain. We had a lovely time, but I always love getting back home after a holiday. I’m especially happy to be back in my kitchen and to get back into some healthier eating! We definitely made the most of the tapas and paella situation in Spain, so some lighter eating is definitely in order.
