Falafel with Kale Tabouli

My weekly meal plans usually involve a few actual recipes, and a few quick meals. One of our favourite quick meals is falafel sandwiches. They are yummy, relatively healthy (especially if you bake them), and can be thrown together quite quickly and painlessly. I normally just half some pita bread, spread some hummus and tzatziki (a Greek, yoghurt based sauce) inside, add some shredded spinach, tomatoes, cucumber, and then try to shove in a few falafel balls. (I also like mine with some hot sauce!)

Tonight we had ready-made falafel on the menu, but when I realised we had all the ingredients for some kale tabouli salad, I decided to make some of that as well. (Tabouli salad is normally made with parsley, but I prefer to make it with kale. That being said, it would probably be good with both parsley and kale! #nexttime)

[SIDE NOTE: Just a quick side note about pre-made falafel. Falafel is actually pretty simple to make from scratch, and even easier to make from a box mix, so buying the ready made ones in a package is SUPER lazy of me, but they are actually pretty tasty! I like these Waitrose ones (via Ocado) that are made with sweet potato and have currants and other yummy bits inside. They also make a yummy snack right from the fridge if you dip them into a bit of hummus!]

This is a very bare bones kale tabouli recipe, but given that tonight was meant to be a quick meal, I put in minimal effort; it still tasted great!

Falafel with Kale Tabouli

Ingredients

  • 2 cups of finely chopped kale
  • 1/2 cup of dried bulgar wheat
  • 1 small tomato (I used a handful of quartered cherry tomatoes)
  • 1 grated shallot (try not to grate into your thumb like I did! Ouch!)
  • a drizzle of olive oil
  • a squeeze of lemon juice
  • salt to taste
  • a few dashes of smoked paprika if that's your thing

Instructions

boil the bulgar wheat until it is soft (5-10 minutes) and let cool

meanwhile, finely chop up your kale and put it in a medium sized bowl (or skip the chopping, and just put it in the bowl and go at it with the kitchen scissors)

chop your tomato and add it to the bowl of kale

grate your shallot and add it to the bowl

once the bulgar wheat has cooled, add that as well

add a drizzle of olive oil

add your squeeze of lemon

add salt and smoked paprika to taste

I added a bit more bulgar wheat to Pete’s bowl since he doesn’t have many molars yet. I also gave the kids some of the yummy pita I bought and they liked dipping it in the hummus and tzatziki.
