Salmon Curry Hungerpot

This is another favourite in the Hungerford household. Not only is it delicious, but it is fun and easy to make! Just dump all the ingredients in the pot and you’re done. It is a perfect weeknight meal!

Salmon Curry Pasta Hungerpot

Print Recipe
Serves: 4 Cooking Time: 30 min


  • enough oil to cover the bottom of the pot
  • 3/4 a package of 500g of linguine (one 12oz package)
  • 700ml water (3 cups)
  • 1 can coconut milk
  • 1 chicken or veg stock cubes
  • 2 cloves garlic, thinly sliced
  • 1 Onion sliced
  • 2-3 red and orange peppers, sliced
  • 15 grape tomatoes cut in half
  • 400g of salmon (1 pound)
  • 1 spoonful of mild Indian curry paste
  • 1 bay leaf
  • leaves from a bunch of coriander (cilantro)
  • (optional: a few handfuls of fresh spinach)



drizzle the oil on the bottom of the pot before adding all the other ingredients


cover and bring to a boil before lowering heat to a simmer


stir occasionally


cook until the pasta is al dente


throw in a few handfuls of chopped spinach during the last few minutes for a bit of extra veg

    I made this for my parents for a simple but delicious weekday supper during their visit to see me in Los Angeles from London (we’re British but I relocated to the states a year ago!) It was delicious, although we struggled so much to find Indian curry paste in LA (even in the huge Venice Wholefoods) that in the end I substituted it for Thai green curry paste and it was still amazing 🙂

    I’ll wait to try the original version when in back in London and can get my hands on some Indian curry paste! Thanks Hungermama!

      I’m surprised you couldn’t find the curry paste, but glad to hear the green curry paste also worked! I may have to try that! x

    Made this wonderpot for the first time this evening and it was delicious! As we just moved to Germany I couldn’t find the indian paste so replaced it with thai red curry paste. It was still lush! Also the first time I tried one of your recipes and it definitely makes me want to try more of them. Gruyere mac and cheese on the menu for tomorrow…

    Went for a long weekend away with friends and all the kids. Put the kids to bed and then I got cracking with this recipie, which at first I did think was strange (salmon and pasta?!). But oh my, what a triumph it was! Everyone thought it was delicious, had seconds and thought I was a culinary wizard!! Definitely going to be a staple in my household now. Thanks Bethy x

    Would this work with noodles? Curry and pasta seems abit strange although I noticed you do it for other recipes so I should probably just try it.
