I love the idea of making my own pasta sauce, but every time I do it, I regret it. I’ve just never mastered the art. This sheet pan technique, however, is fool proof!
A friend shared a picture of her version on my meal planning facebook page and I knew it was destined for my kitchen table. I added carrot for sweetness and if I had had courgette, I would have thrown that on the sheet as well.
I used this as a sauce for meatballs, but it would work beautifully in a lasagna, or as a sauce for pasta. It is a great way to use up the veg in your fridge before it goes off!
Sheet Pan Pasta SaucePrint Recipe
- 5 medium tomatoes
- 2 handfuls of cherry tomatoes
- 1-2 red peppers
- 1-3 carrots
- 1 onion
- 6 cloves of garlic (or less if you're not as big a garlic fan as I am!)
- olive oil
- salt and pepper
Chop all veg
Mix chopped veg together on a sheet pan and drizzle with olive oil
Season with salt and pepper
Cook at 200°C (400°F) whilst stirring every 10 minutes or so
Let cook for 20-30 minutes or until the veg is soft
Whiz in a food processor until smooth and salt and pepper to taste
(If it is missing something, try a dash of red wine vinegar!)
