School has begun, we have a new puppy, and baby Iona is now toddler Iona. As a result, we have eaten loads of take-out lately, which has been delicious and fun, if unsustainable. We looked at our budget last night and realized that the fun definitely comes with a price tag. It’s time to revisit some tasty home-made meals that I can put together in very little time, amidst varying degrees of chaos in the house. Friends with Recipes: Greek Chicken Gyros with Avocado Dill Spread

Time for another “Friends with Recipes” post! This one is from my IG friend Amy who is one of the most thoughtful and creative mamas out there. We’ve never met in person, but I can tell you from seeing her pictures every day for the last three (or so) years that she is incredibly crafty, an excellent braider (check out her #hairenvywithavery hashtag!), and she likes to eat well. She is also a very real and genuine mama who goes over and above to make life awesome for her kids. I find her account so inspiring. (Keep an eye out for their annual summer “to-do” list. I’m still trying to work up enough energy to make one of our own!). 

All of that is to say that I knew Amy would come up with a great recipe for us, and indeed she did!

Greek Chicken Gyros with Avocado Dill Spread – Amy Holgerson

Hi. I am Amy, Mama to 2 kiddies, wifie to one dude, and all around wannabe domestic goddess. You can find me on IG over sharing under the handle @bugbeansmomma.

When Bethie asked if I would be into sharing a recipe, I was very excited. Then we started a two week flooring remodel project. Living without a stove for two weeks can really put a damper on my wannabe domestic goddess routine. But last night I got to cook my first meal since getting our stove back in. I decided to take my Greek chicken I already have on rotation and put a little twist on it. So with that said, here is my Greek chicken gyro with a creamy avocado dill spread.

Hawaiian Salmon Burgers

I’ve made some big changes to my inspiration recipe for these salmon burgers. The changes I made simplified things quite a lot, but also added strength to the salmon mixture so they would be easier to cook up. The end result was absolutely delicious! We will definitely have these again soon!

PS: I mistakenly got half the amount of salmon I needed and so only made a half batch of these as seen in the pictures below. A half batch fed my family of four, but Jason and I would have definitely each had another one of these if there had been more! I’ve written up the full recipe below. It generously feeds a family of four with perhaps a few leftovers.

Sweet Potato & Avocado Tacos with Slaw

I am so excited to tell you about my new collaboration with the online magazine, Ladyland! These ladies are basically the coolest mums online. Truly. They blog about craft projects, life hacks, decorating, makeup, and anything else a hip mum needs to know about life. I am over the moon to have been invited to be their food contributor! The best part (aside from getting to make ridiculous Periscope videos with Emma) is that they are able to take my simple meals and make them look incredible. I am always taking quick snaps with my iPhone while trying to cook a weeknight meal for two hungry kids, and my pictures are usually mediocre at best. But look out, because a few times a month you will be treated to seeing my food styled and photographed by Ladyland! (Whoop whoop!)

Teriyaki Salmon with Spinach and Avocado

Salmon is delicious on its own, but this recipe takes it from delicious to absolutely decadent! The original recipe is worth trying if you have the time, but this version is WAY easier and still amazing. Both kids loved it; Charlotte even had seconds!

Processed with VSCOcam with t1 presetThe key to this dish is to make sure you’re using a good teriyaki sauce. The original recipe has you make your own, but I didn’t have the time this week. Instead, I read loads of reviews on Ocado (my grocery delivery service) before deciding on this one (not affiliate link). It was so good! I’ll definitely buy it again!
