This is How We Do It: Sourdough Starter

I’ve been baking lots of bread at home lately. My current favorite recipe calls for a natural starter (also known as sourdough, or leaven), which sounded daunting until I actually tried it. If you can stir flour and water together, you’ve got this. It takes about 5 minutes per day to get your starter up and running, and once it’s alive and bubbling it takes about 5 minutes each week to maintain. If you’re like me, you might feel a sense of ownership and attachment; after all, this is your unique bread starter, cultivated from your environment and brought to life with your care. The longer your maintain your starter, the more strength and flavor it will develop.

Barb’s Famous Sausage Bread

When I was three-years-old, a new family moved into the house right next to ours. As luck would have it they went to the same church as us, had their kids enrolled in the same parochial school that my siblings attended, and best of all, they had a daughter my age! But that was just the tip of the iceberg: they also happened to be the most wonderful, fun, welcoming family I’ve ever met. It didn’t take long for me to invite myself to be their fourth child.

Bacon, Spinach, and Sautéed Onion Grilled Cheese.

I usually stick to healthier dinners than this, but when I saw this recipe on Cup of Jo last week, I knew I had to give it a go! My version ended up being quite different from the original recipe due to the bacon and a few shortcuts, but I can’t imagine that the original was any tastier because this was out-of-this-world delicious!! Definitely a decadent treat, but it still had spinach in it, so I refuse to feel guilty about it! 😉

While this doesn’t qualify as a one-pot meal, it is technically a one-pan meal! When all was said and done, I had only dirtied a cutting board, knife, two spatulas, and one pan. Oh, and a wine glass . . .
