Cheesy Broccoli Jacket Potato

I had never heard the term “jacket potato” until we moved to the UK. In America we would just call it a baked potato, but give it a cutesy name and it all of a sudden becomes a thing! You can find “jacket potatoes” on most cafe menus and they seem to be fairly common at dinner time as well. While I have indulged in a jacket potato at a cafe in the past, I have never tried them at home until this week (using this recipe as inspiration). The result? We’ll definitely be having them again soon!

My busiest week of the year has finally passed, and I am looking forward to a relaxed and cosy few weeks leading up to Christmas! This week’s meal plan certainly reflects that: it is full of tummy warming comfort foods. I’m especially looking forward to the chicken and dumplings. It is such an easy and delicious meal!

You know what they call Thanksgiving in the UK? Thursday. There’s no day off, no turkey, no parades . . .  just the day before Friday. It can be a difficult day for Americans abroad. That being said, we are hosting our fifth Thanksgiving here in London on Saturday with friends and neighbours; it always ends up being one of the best days of the year. I will be sure to put up a post with pictures of what we make and eat!

Non - Vegetarian Meals

Bacon, Spinach, and Sautéed Onion Grilled Cheese.

I usually stick to healthier dinners than this, but when I saw this recipe on Cup of Jo last week, I knew I had to give it a go! My version ended up being quite different from the original recipe due to the bacon and a few shortcuts, but I can’t imagine that the original was any tastier because this was out-of-this-world delicious!! Definitely a decadent treat, but it still had spinach in it, so I refuse to feel guilty about it! 😉

Hungermama grilled cheese

While this doesn’t qualify as a one-pot meal, it is technically a one-pan meal! When all was said and done, I had only dirtied a cutting board, knife, two spatulas, and one pan. Oh, and a wine glass . . .
