Coconut Lentil Soup

Big news for The Hungerfords this week: our applications for British citizenship were approved. When Jason told me I nearly started to cry. Not out of excitement or sadness, but I’m pretty sure it was just pure anxiety. Our swearing in ceremony is scheduled for Tuesday. That is just a handful of days from today.

I have incredibly mixed feelings about becoming British and for a while I considered not doing it at all. What hit me when I found out that we were imminently becoming British citizens is that it just seems so unfair that we even get the choice at all. I think about the Syrian families desperate for a safe place to live. Families who would love to be given the choice between two (relatively) safe countries, and here I am feeling so conflicted about the luxury. It is pretty last minute, but I am considering having a happy hour soon to celebrate our new citizenship and simultaneously raise awareness (and money) for the refugee crisis our world is currently facing.

Gosh, that was a very serious introduction to this soup.

Lentils and Veg in Peanut Sauce

I have made this dish a number of times and finally managed to write down my version. I based my recipe on this one, but doubled it, simplified it, and removed the spiciness (grownups can easily add it back in later).

This recipe is great for using whatever leftover veg you have hanging around your fridge. It could be made even easier if you purchase the pre-cut veg from the store as the chopping is the most time consuming bit! (But I enjoy a bit of chopping, so happy to do it myself.) Continue Reading…

Lentils with Farro

Lentils with Farro

I discovered the joy of these savory lentils in my early twenties. In addition to being a simple, affordable meal, stewed lentils and rice topped with fried onion is pure comfort. Mujadra, Mejadra, and Mujadara are all names for the middle-eastern dish, which typically has warm spices and is sometimes served with yogurt sauce. Mejadra (as I’ll call it from now on) is like chicken soup. There are many ways to make it, and those of us who have developed our own version regard it as a warm and satisfying staple when comfort food is required.

Lentils with Farro

Some versions of Mejadra are ‘one-pot’ meals (Hungerpot, anyone?) however I love pairing my lentils with Farro (a hearty, ancient form of wheat). Farro requires a longer cooking time than rice, which can complicate the timing if you don’t want your lentils to turn to mush. This is a marvelous opportunity to use chicken or vegetable stock instead of water to increase the rich, savory profile of this dish. Continue Reading…

Friends with Recipes: A Duo of Inspired Spanish Salads

This week’s “Friends with Recipes” post is from yet another of the many lovely people I have met through Instagram. Aleid was sweet enough to come say hit to me at an event last year and we had a great time chatting (mostly about toddlers and #froobs). I’m a sucker for interesting, fun, positive people, so when she asked about submitting a recipe that ties into her new art blog, I couldn’t say no!

I love the creativity behind this gorgeous meal, and the two salads offered below are a perfect addition to a light, tapas style dinner (my favourite kind of meal!). I hope you enjoy this as much as I do!

Lentil Soup with Smoked Paprika

Lentil Soup recipe

Jason discovered this recipe shortly after we moved to London and it has been a favourite ever since. It tastes delicious, is easy to make, and is full of healthy ingredients. A major bonus is that as long as you have garlic and an onion on hand, the rest of the ingredients can come from your pantry so it is a great last minute meal! (It is definitely nicer with fresh thyme, but still delicious with dried!) I’ve adapted this recipe so that it is a bit easier for a weeknight meal, and have also included a handful of spinach for a bit of veg (though I forgot to put it in this batch! Oops!).

I just finished up a meeting with another SE London mama about some really fun food/community building ideas! We’re still figuring out how to make it all work, but it is shaping up to be pretty exciting! I can’t wait to tell you more!

Easy lentil soup recipe

This is one of my favourite soups. The ingredients are simple (onion, garlic, carrot, lentils, etc.), but they mix together to create a perfectly flavoured meal.

Weekly meal planner number 3

I was in a panic last week when I realised that my two dinners from Marley Spoon were coming this week and not last week! I happened to have some frozen fish cakes on hand that saved the day for one night, and we ended up going for dinner at a friend’s house the second night, so it all worked out in the end! Disaster averted. 😉

I am excited to include my most favourite lentil soup in this week’s plan. Even my mom (a notoriously picker eater) loves it! We’re also doing some quick and yummy burrito bowls. I’ll make some fried plantains for them if I get to the Brixton Market before Wednesday!
