Mushroom Bourguignon with Brussel Sprout Mash

I saw a recipe for mushroom bourguignon on my “Hungermama Meal Planning” Facebook group and knew I had to give it a go. We are big fans of beef bourguignon around our house and this vegetarian version was the first one I had seen that worth a try.

The original recipe was a bit too fussy for my (lazy) tastes, so I did what I could to simplify things. I also added more veg via the brussel sprouts in the mash. The most time consuming bit is washing and cutting all the mushrooms, but if you’re really pressed for time, you can always buy them chopped! Meal Plan #8

I am SO excited for this week’s vegetarian chili! It is slow cooker food at its best. We’re also throwing in a meal out this week to celebrate Jason FINALLY returning from a work trip to China! We’ll probably hit one of our favourite local spots as we’ll be moving to a new neighbourhood in just a few weeks! (sniff sniff)

Weekly Meal Plan #4

You know what they call Thanksgiving in the UK? Thursday. There’s no day off, no turkey, no parades . . .  just the day before Friday. It can be a difficult day for Americans abroad. That being said, we are hosting our fifth Thanksgiving here in London on Saturday with friends and neighbours; it always ends up being one of the best days of the year. I will be sure to put up a post with pictures of what we make and eat!

Weekly Meal Plan #3

I was in a panic last week when I realised that my two dinners from Marley Spoon were coming this week and not last week! I happened to have some frozen fish cakes on hand that saved the day for one night, and we ended up going for dinner at a friend’s house the second night, so it all worked out in the end! Disaster averted. 😉

I am excited to include my most favourite lentil soup in this week’s plan. Even my mom (a notoriously picker eater) loves it! We’re also doing some quick and yummy burrito bowls. I’ll make some fried plantains for them if I get to the Brixton Market before Wednesday!
