I went to look up my miso soup recipe on the blog and was surprised to see that I didn’t have one posted! Perhaps it is because it is one of those meals that is not really cooking, but more just assembling. I’ve been planning this Greek hungerpot in my head for months and finally got around to it last week! I am happy to announce that it was lovely and delicious and as easy as pie to make.

The flavors in this dish are so bright and fresh. Asparagus, cherry tomatoes, lemon zest, shallots, garlic, and rosemary accompany balsamic-marinated chicken on a single tray under high heat, and it all cooks in less than 25 minutes.
I’ve made a new hungerpot! I based the recipe on this one, but as I am wont to do, I changed it quite a bit. The biggest change I made was to cut out the heavy cream. The beauty of these one-pot recipes is that all the starch from the pasta stays in the pot and makes the dish super creamy tasting without any actual dairy product!
Happy Wednesday! We are currently in the middle of our second week of half term (last week was one kid, and this week is the other) so things have been a bit crazy. The good news is that we have had warmer weather this week than we have had in ages! We’ve been skipping our jackets, wearing shoes without socks, and playing in the park. It has been brilliant!
Despite the warmer weather, we’re still not quite out of the winter woods and it is still nice to settle in to a cosy dinner in the evenings. This recipe is perfect for that!

We all know them: the Picky Eaters, kids who only eat white foods. I’ve often told my kids that I will never force-feed them anything weird or gross, so if I put it on the table the odds are good that the food is both edible and nutritious. Somehow, even when faced with such wisdom, I get complaints.
We are quite lucky, as our dinners can literally be quite colorful (see Lettuce Wraps). One evening I served a meal everyone loved, and after we tucked in we realized that I had inadvertently served every kid’s dream dinner: all white. Here it is, I hope your kids like it as much as mine do!

Hungerpots are my new favourite way to cook: just throw everything in at the same time, give it a stir, and you’re done! It could hardly be easier! This one would be yummy with some added chicken pieces or prawns (shrimp), but we loved it as-is.
Tonight my five-year-old daughter, Charlotte, updated her favourite food. What might this little girl’s most favourite food in the world be? This pea carbonara. Yup, it was that good.
I’ve both simplified and improved upon the original recipe (IMHO) which is good because Charlotte has now requested that we have this every week! Ha!
Holy Week can be a bit crazy for church musicians. Thursday is a particularly busy day, so I will be preparing a casserole for the babysitter to pop in the oven. Hopefully there will be enough for both Jason and me to have leftovers when we get home! I’ll also finally be getting to that pea carbonara this week that I’ve been intending to re-try for ages. Fingers crossed I can get it to turn out better this time than last time (when it was FAR too creamy!).
