Salad with Cherries and Pistachios

We eat this salad a few nights per week, at least. It’s quick to throw together, and the ingredients are easy to keep on hand. Sweet, tangy, toasty, and rich, it can stand on it’s own, or it makes a great side dish. Use a citrus or vinegar based dressing (bottled is perfectly good); you can assemble a basic vinaigrette using staples from your pantry, if you like. The simpler the dressing, the better. Quick Meal: Fajita Bowls

Processed with VSCOcam with t1 presetDoes anyone remember that TV show called Semi Homemade with Sandra Lee? That’s what I always think of when I take massive shortcuts as I do in this quick meal. I’m kind of embarrassed to show you how to make this because it involves a product that I am a bit ashamed of using: pre-cooked rice. WAIT! Before you stop reading, give me a second to explain . . . Okay, I don’t actually have a great explanation, other than I saw a friend using it to make dinner one night and it tasted great! No joke. Since then, I have always kept a bag of it around, because I inevitably forget to cook rice until the rest of my meal is already made. I use this “Mexican style” version in this dish:

Falafel with Kale Tabouli

My weekly meal plans usually involve a few actual recipes, and a few quick meals. One of our favourite quick meals is falafel sandwiches. They are yummy, relatively healthy (especially if you bake them), and can be thrown together quite quickly and painlessly. I normally just half some pita bread, spread some hummus and tzatziki (a Greek, yoghurt based sauce) inside, add some shredded spinach, tomatoes, cucumber, and then try to shove in a few falafel balls. (I also like mine with some hot sauce!)

Tonight we had ready-made falafel on the menu, but when I realised we had all the ingredients for some kale tabouli salad, I decided to make some of that as well. (Tabouli salad is normally made with parsley, but I prefer to make it with kale. That being said, it would probably be good with both parsley and kale! #nexttime)

Non - Vegetarian Meals

Bacon, Spinach, and Sautéed Onion Grilled Cheese.

I usually stick to healthier dinners than this, but when I saw this recipe on Cup of Jo last week, I knew I had to give it a go! My version ended up being quite different from the original recipe due to the bacon and a few shortcuts, but I can’t imagine that the original was any tastier because this was out-of-this-world delicious!! Definitely a decadent treat, but it still had spinach in it, so I refuse to feel guilty about it! 😉

Hungermama grilled cheese

While this doesn’t qualify as a one-pot meal, it is technically a one-pan meal! When all was said and done, I had only dirtied a cutting board, knife, two spatulas, and one pan. Oh, and a wine glass . . .
