Teriyaki Salmon with Spinach and Avocado

Salmon is delicious on its own, but this recipe takes it from delicious to absolutely decadent! The original recipe is worth trying if you have the time, but this version is WAY easier and still amazing. Both kids loved it; Charlotte even had seconds!

Processed with VSCOcam with t1 presetThe key to this dish is to make sure you’re using a good teriyaki sauce. The original recipe has you make your own, but I didn’t have the time this week. Instead, I read loads of reviews on Ocado (my grocery delivery service) before deciding on this one (not affiliate link). It was so good! I’ll definitely buy it again!

Meal Plan #10

In celebration of the tenth weekly meal plan here on, I am launching a new “Friends with Recipes” series! I have lined up some of my favourite Instagrammers to share their favourite weeknight meals with you, and would LOVE to hear from the rest of you as well! I’m going for an easy week of dinners due to our impending move on Saturday (!!), so I’m taking things easy this week. I have added a yummy pre-made meal on Monday, I’m using up some freezer items on Tuesday and Thursday, and we’ll go out to dinner on Friday given that our entire house will be in boxes by then!

Weekly Meal Plan #3

I was in a panic last week when I realised that my two dinners from Marley Spoon were coming this week and not last week! I happened to have some frozen fish cakes on hand that saved the day for one night, and we ended up going for dinner at a friend’s house the second night, so it all worked out in the end! Disaster averted. 😉

I am excited to include my most favourite lentil soup in this week’s plan. Even my mom (a notoriously picker eater) loves it! We’re also doing some quick and yummy burrito bowls. I’ll make some fried plantains for them if I get to the Brixton Market before Wednesday!

Non - Vegetarian Meals

Bacon, Spinach, and Sautéed Onion Grilled Cheese.

I usually stick to healthier dinners than this, but when I saw this recipe on Cup of Jo last week, I knew I had to give it a go! My version ended up being quite different from the original recipe due to the bacon and a few shortcuts, but I can’t imagine that the original was any tastier because this was out-of-this-world delicious!! Definitely a decadent treat, but it still had spinach in it, so I refuse to feel guilty about it! 😉

While this doesn’t qualify as a one-pot meal, it is technically a one-pan meal! When all was said and done, I had only dirtied a cutting board, knife, two spatulas, and one pan. Oh, and a wine glass . . .
