Vegetable Lasagna from Marley Spoon!

I came home from the school run to find this box sitting on my doorstep:

I knew just what would be inside: my two “family box” recipes from Marley Spoon! Woo hoo! I was thrilled when they offered to send me a few recipes to share with you all (twist my arm . . . ) and I hope you find this sort of thing helpful. I personally love creative solutions to every day problems (i.e.: no time to plan dinner), and Marley Spoon has really nailed the solution on this one.

Ordering was super easy: I went to their site, and chose two different recipes from their weekly options. Then this afternoon all the ingredients and pretty instruction cards arrived on my doorstep!

The recipe was easy to follow, and the steps were all very simple. It involved some chopping and assembling, and that’s it! No béchamel sauce required (you mix in some crème fraîche instead), and the clean up was also quite easy which I always appreciate! But best of all, it was really yummy!

These boxes basically take all of the work out of meal planning. There is no recipe scouring, no involved food order online, no stopping at the store (or a neighbour’s!) for last minute ingredients you were sure were in the cupboard . . . It was all super easy! Perfect for busy families who like making home cooked meals, but don’t have the time/energy to plan it out. I could definitely see getting a week’s worth of these for Jason and the kids the next time I am out of town!

I love that they source seasonal ingredients based on the Slow Food movement principles:

  • GOOD: quality, flavoursome and healthy food
  • CLEAN: production that does not harm the environment
  • FAIR: accessible prices for consumers and fair conditions and pay for producers

I am also a fan of the fact that all of the packaging is recyclable; they even use sheep’s wool for insulating refrigerated items which I think is so clever!

Lastly, it should be noted that these boxes are surprisingly affordable. The family box feeds a family of four for £4.90 per meal (so under £20 for the entire family). If I ever get tired of doing my own meal planning, I’ll know where to turn! 😉
